Caribbean Glazed Meatloaf

Ingredients: 

2 lb ground bison (or chicken, turkey, beef)
1 egg
4 garlic cloves, minced
⅓ cup panko breadcrumbs
Half red onion, chopped
5 dates, chopped
4-5 multi-colored mini sweet peppers, chopped
5 tablespoons BoCa Flavor’s Taíno Spice
Sea salt and ground black pepper
3 tablespoons honey barbeque sauce
2 tablespoon thai sweet chili sauce
1 tablespoon fruit preserve, preferably a berry mix
Cooking spray, preferably olive oil based

OPTIONAL FLAVOR BOOST: Add 2 tablespoon of Capital City Mambo Sauce and 1 tablespoon of maple bacon onion jam


DIRECTIONS:

  1. Preheat the oven to 450 degrees. Line a rimmed baking sheet with excess foil on all sides, then spray with cooking spray.
  2. In a large stainless steel mixing bowl, combine the ground meat, egg, garlic, onions, breadcrumbs, dates, sweet peppers, and Taíno Spice. Season with salt and black pepper to taste.
  3. Place the meat mixture in the center of the foil. Gently roll and shape the mixture with the foil until it forms a tightly packed loaf, about 10 inches by 4 inches. Flatten the foil along the perimeter to fit the pan.
  4. In a small bowl, combine barbeque sauce, chili sauce, and fruit preserve. [OPTIONAL FLAVOR BOOST: We add 2 tablespoon of Capital City Mambo Sauce and 1 tablespoon of maple bacon onion jam. You can double the measurements to have extra sauce for plating your dish]
  5. Evenly top the loaf with the sauce, then sprinkle Taíno Spice on top.
  6. Place the baking pan on the middle rack towards the back of the preheated oven without moving or turning for about 35 minutes. Check the internal temperature of the thickest part of the meatloaf until it reaches at least 165 degrees.
  7. Remove from the oven and let rest for at least 2 minutes before you serve and enjoy.
